In Indonesia, several ingredients are in the spotlight, at least for me. Coconut, sweet potatoes, and brown sugar.
The three ingredients are like saving the lives of the people in our village because we can make a wide variety of delicious and healthy foods.
It's still in a Veganuary setting, so I'm going to share with you a vegan dessert recipe that's easy to make with only three ingredients and no baking.

Ingredients
- 500 grams of sweet potatoes.
- 300 grams of brown sugar of palm sugar. Finely chopped.
- 200 grams of grated coconut.
How to make
- Step 1
Cut the sweet potatoes into smaller pieces. Then boil it, or you can steam sweet potatoes. It will not affect the outcome of this dessert later.
- Step 2
After the sweet potatoes are cooked, let them cool.
- Step 3
You have to make sure the boiled/steamed sweet potatoes are completely cold for processing at the next step.
If you process the sweet potatoes still hot, the texture will be mushy and can't be turned into bars. And you will need flour if the texture becomes mushy. While in this recipe I don't use flour.
So after cold sweet potatoes, mash the sweet potatoes. I do this with the bottom of the cup.
Do it until the sweet potatoes become a soft cake dough.
- Step 4
Add chopped brown sugar and 120 grams of grated coconut. While the rest of the grated coconut is used to sprinkle the cakes at the final stage.
Mix the three ingredients well.
- Step 5
After the dough is well blended, it's time to put it on the mold. Use a mold that is easy to remove the dough from.
You can use baking paper on the bottom of the mold to make it easier to remove the cake's dough later.
- Step 6
Compact the dough. Then it's ready to be cut into pieces. Here are some of the slices of cake that I took out of the mold.
- Step 7
Serve with a sprinkling of grated coconut. You can also store these cakes in the freezer a few hours before serving if you want a denser texture.
For me, I prefer a smooth texture without putting it in the freezer.
In Indonesia, we call these cakes "GETUK". Have you ever made a cake similar to the one I made?
