So the winter's over and now there's only two spring mushrooms that still grow -- Chantrelles, and truffles. This is this weekend's mushroom haul, and their final form :)
Chantrelles are rare, and its not every day you find them, you may find a bunch around a tree, and then spend the whole day looking for more and scanning the whole forest without finding any.
Last weekend I finally got lucky, at first it was just to fill the hat:
But later filled the basket, and even found a spike of a porcupine :)
Chantrelles are a gourmet mushroom, so I wanted to cook something fancy.
I cut them to big pieces, and cooked them with potatoes, peas and sweet potatoes, added coconut juice and pieces of Salmon, creating a great dish, it was VERY tasty:
