Beyond the gratifying culinary pleasures, based mainly on that remarkable and at the same time happy pairing between two products of supreme quality, such as wine and lamb, the ancient Castilian villas shine, above all, for that pleasant sensation of past aromas, which, like the irrepressible passage of a shooting star, leave, in that spiritual palate, which is the soul, small but unforgettable flavors of eternity. So much so, that, still freed, in part, from their melancholic medieval appearance, the old taverns, even with their absenteeism in the face of tradition, offer, on their latest cheap bar tables, the possibility of getting cloyed with the beauty of their Art, at the same time as the wine, warmly dreamy, like the meanders that the famous Canal de Castilla leaves behind, offers the possibility of rediscovering a custom, which comes to convince, even if it is false, that all time past, it was undoubtedly better.
It happens, above all, in those old Historical Centers, which, even saving the miserable fashions of times, eminently ungrateful, persist in remaining unscathed, oblivious to anything other than continuing to serve that medieval spirit that saw them born and where They grew up in the shadow of an outstanding spirituality, capable of building, metaphorically speaking, castles in the air. That is why, swirling around that sublime lesson in sacred geometry, which were the great temples, the taverns contributed to alleviate the sorrows of travelers and pilgrims, once their spirits were freed from the mortal weight of their faults, making the old good. proverb, which, openly and going directly to the point, said very wisely: with bread and wine, the Way is well walked.
Más allá de los gratificantes placeres culinarios, basados, principalmente, en ese notable y a la vez, feliz maridaje entre dos productos de calidad suprema, como son, el vino y el cordero, las antiguas villas castellanas, brillan, sobre todo, por esa grata sensación a aromas pasados, que, como el paso incontenible de una estrella fugaz, dejan, en ese paladar espiritual, que es el alma, pequeños pero inolvidables sabores a eternidad. Tal es así, que, aún liberadas, en parte, de su melancólico aspecto medieval, las viejas tabernas, incluso con el absentismo frente a la tradición, ofrecen, en sus novísimas mesas de bar barato, la posibilidad de empalagarse con la belleza de su Arte, a la vez que el vino, cálidamente ensoñador, como los meandros que va dejando a su paso el celebérrimo Canal de Castilla, ofrece la posibilidad de reencontrarse con un costumbrismo, que llega a convencer, aunque sea falso, que todo tiempo pasado, fue indudablemente mejor.
Ocurre, sobre todo, en esos viejos Cascos Históricos, que, aún salvando la miserables modas de unos tiempos, eminentemente desagradecidos, se obstinan en permanecer incólumes, ajenos a otra cosa que no sea continuar sirviendo a ese espíritu medieval que los vio nacer y donde crecieron, a la sombra de una espiritualidad sobresaliente, capaz de levantar, metafóricamente hablando, castillos en el aire. Por eso, arremolinadas alrededor de esa sublime lección de geometría sagrada, que eran los grandes templos, las tabernas contribuían a aliviar las penas de los viajeros y de los peregrinos, una vez liberados sus espíritus del peso mortal de sus faltas, haciendo bueno el viejo refrán, que, sin tapujos y yendo directamente al grano, decía muy sabiamente: con pan y vino, bien se anda el Camino.
