When Your Water Spinach is Ready to be Harvested

Day by day, as I watched my hydroponic bok choy grow, I became very happy. Especially when they showed positive progress. You know, I was very pessimistic about this experiment. I couldn't wait to harvest the bok choy, but it seemed like it would take another two weeks or a month for my bok choy to truly produce full stems and leaves.

But you know, I'll probably miss out on this bok choy harvest. I'll be leaving it for two weeks. I'll be going to my hometown. I guess my first bok choy will be harvested by my neighbor. That's fine with me.

Because I wanted to experience my first harvest, I took the bold step of harvesting my strange water spinach. You know, the night before, I saw the straight stems, but when morning came, they were bent and looked like they wanted to spread like vines. So I decided to harvest them first.

After harvesting it, it wasn't much, but it was enough to stir-fry it and eat it with salted fish. So, yeah, I did it right away. This was my first stir-fried water spinach since getting my braces back. I hadn't eaten water spinach for six months, afraid it would get stuck in my teeth. Only today did I work up the courage to eat this special water spinach.
