I am running mine from New Zealand (but not yet open for now). Just for RPC node on the other nodes I have. Hive-Engine and Honeycomb side-chains (DLUX and others). But once I have the chance to get my new gear, its going to be another one joining the public with full history even. =) time time... time and money... (more time than money LOL).
I hesitated with Singapore because I expatriated in Thailand, not very far, but as all my servers (for my customers) are in France I took it there.
By curiosity what are the specs for Honeycomb nodes? For Hive-Engine I know (I was there at the HE witnesses Testnet).
Honeycomb nodes run almost anywhere. With exception of the IPFS if you want your own (which I would recommend). Could even run from your phone. Pure JS with consensus states on IPFS.
Any recent VM should do it.... even the smallest ones. Or can also run multiple nodes on the same machine via containers.
