Last night was pasta night - as usual - on a Wednesday. It's been a while since I "did" a pasta post. One can have too much of a good thing, I sometimes think. Or perhaps a break is as good as a holiday... We have still been having our Wednesday pasta, but I think I have (unusually) had other things on my mind. Not this morning.
Last night's pasta was a flavour memory.
The sauce, such as it was, used up a smidgen of leftover tomato sauce that was occupying fridge space. To that, and to make it richer, I added tomato puree, a little water and some sun-dried tomato leather pesto. After adding the pasta (I should have taken photos!) I added a hefty dollop of Trish's garlicky tzatziki. Plated, that was topped with crispy bacon and served with grated cheese.
Call it a bastardised version of the Macchiata pasta we used to eat at Borussos in Campground Road, Cape Town, more than 20 years ago.
Happy memories on a plate.

Wow this looks amazing, i love pasta, want to try this recipe
