




今天在家里做三鲜,就是鱼丸,肉丸,肉糕。先做的鱼丸,把鱼切好,然后用绞肉机加水搅碎,打成细腻的肉泥,然后加盐、白胡椒等调味料,然后加灰面,面多了加水,水多了加面,还在里面混了打发的鸡蛋清,接着在盆里不停的搅拌,最后就是上锅里煮。我当然吃到了新鲜的鱼丸啦,刚出锅的,肉质鲜美,口感嫩滑,美味的呢🤤。
做完了鱼丸之后炸了肉丸,比鱼丸的做法要简单一点,肉是提前准备好的。本来是在院里的柴火灶上面炸的,结果外面在下小雨,风一吹雨往锅里砸,噼里啪啦的,而且火候不好控制,最后还是在厨房里用煤气灶做的。我在旁边候着,边炸我边吃😄。
还有绞肉机,前两年买了一个小的绞肉机,用久了刀有点钝,想换一个刀片,那个型号的已经下架了,不过找客服问了一下,在网上配一个也没问题。
做这些丸子还挺麻烦的,做这两样就已经花了一下午,剩下的还有没做的肉糕和藕丸子。
