餐条是老爸闲来无事在家后的河里钓来的,平时钓不多时都拿来红烧或清蒸烹饪吃了,钓得多时又加上天气时宜就拿来晒干,这个季节来配酒不错的。

先来讲讲餐条如何晒干,这个一般都是在冬天进行,钓多时,拿来刮鳞去内脏去鳃,沥干水份后撒上一层厚盐抓捏几下静置1小时。时间到后平铺在筛片上风吹日晒。经常去翻动,冬天没苍蝇,不用盖纱网。等干了装袋放速冻,随取随煮食用。

这下来说下煮法!

准备食材:餐条干、生姜、白酒。

1)取来鱼干,用一个瓶子把鱼干放入,再喷一点高度白酒进去,盖上盖子放置半天。
2)锅中放水,放入蒸架,取出鱼干,把鱼干放到盘子里,撒上生姜丝,蒸10分钟即可。

腌得咸的可配饭,腌得淡的可配酒当零食,嘴巴淡而无味时也可以拿来啃啃,不错哟!
