This week's Hive Top Chef Ingredient is Seafood.
At first glance, I guess many would highlight the seafood as the main dish but for me, I decided to share how a particular seafood can compliment a dish just fine. And for that, I chose Prawns. Coincidently, I've been trying my hands at making a dish from back home. It's called Cantonese Yee Mee, very famous among the Chinese cuisine. We can have this as a main meal or a side dish.
Ingredients :
Meat ( be it pork or chicken )
Prawn ( head & body shell to remove )
2 rolls of Yee Mee
Vegetables ( cut thinly )
Mushroom ( cut thinly )
Garlic & Onions ( for frying )
Soybean ( cut small )
1 whole egg
Seasonings :
Salt
Pepper
Sesame Oil
Chinese Cooking Wine
Corn Flour
Cooking Oil ( for cooking )
Soya Sauce
Oyster Sauce
Steps :
(1) Marinade the meat with salt, pepper, sesame oil, Chinese cooking wine & corn flour. Best to cut the meat thinly for easy marination and eating. Leave meat to marinade for 10 minutes.
(2) Boil a pot of hot water and add in the Yee Mee. Stir it so that the Yee Mee breaks up. Once it softens up, drain it out and rinse it through cold water. Leave it aside to cool.
(2) On a frying pan, heat up and add some oil. Add in garlic & onions and stir fry till fragrant. Add in meat, prawn and soy bean and stir until cook. Next, add in mushroom, followed by vegetables. Add in salt, pepper, soya sauceand oyster sauce and stir well. Add in 1 bowl of water and let simmer. Break the egg and stir slowly. Finally, add in the Yee Mee and mix throughly. Drizzle 1 tsp of Chinese cooking wine for flavour at the end.
Serving :
Using either a large deep bowl or round plate, dish out & it's ready to serve.
Tips :
The amount of water added depends on how watery you like the sauce to be.
Yee Mee comes in large & small portions, so it depends on how many people you want to cook for.
For garnishing, you can add in cut spring onions for color.
As condiments, cut picked green chilli is the best combination for this dish.

I so happen to see a lady selling boxes of it at the local wet market and they looked really fresh.
They are really good. I tried growing my own a couple times but I haven't figured out the right environment for them to successfully take off.
