Hello, @qurator greetings here is my post for Qurator's: Hive Top Chef! | Boiled Eggs. Here is the recipe using boiled eggs.
Traditional Indian masala eggs with chapati.
Ingredients:
4 boiled eggs
1 medium onion chopped
2 small tomatoes chopped
1/2 lime
10-12 cashew nuts
1/2 chines garlic
1 tbsp oil
1/2 tsp hot chili powder
1/2 tsp garam masala
1/4 tsp turmeric
1/2 tbsp fresh coriander
1/4 green chili
1 bay leaf
salt for taste

In the mixer add chopped onion. chopped tomatoes, cashew garlic, coriander, and green chili.
Make a fine paste.
In a pan add oil and 1 bay leaf.
When a bay leaf starts to aromatic add the ground paste into a pan
Stir it constantly until gets cooked and aromatic.
Add chili powder, turmeric, and garam masala. Stir it to mix together.
Add little water around 2 tbsp to the mixture to avoid burning the masala. Stir it again.
Add salt according to the taste.
Now add 1-2 cups of water and cook the masala for 4-5 minutes.
Cut the boiled eggs in halves and add them to the cooked masala the cut side has been down to get the spice in the egg. squeeze the lime juice in it.
Here is egg masala is ready
Enjoy it with Indian flatbread chapati or rice and salad.

I love Indian food, but till now I only enjoy it in the restaurants.
I thought that to make Indian dishes is always time consuming and complicated.
But this recipe is great for newbie in Indian cooking, like myself.
I post many original Indian recipes in the plant power community you can check some of them very easy to try. I will try some non-complicated and easily make with available ingredients everywhere. But in Indian cooking, the most imp is a good mixer to make it easy. please check my previous recipes in qurator top-chef. and in plant power vegan 😊
