- Good evening friends, welcome back to my blog... As I have told you on previous occasions, I love ALL dishes that have a crunchy texture, today I share with you one of my favorite recipes, its process is a little laborious, but easy to prepare. The secret to enjoying a very tasty and appetizing flavor is to season the egg and flour mixture well... Let's put on our apron to make some "exquisite eggplant croquettes".
- Buenas noches amigos, bienvenidos de nuevo a mi blog... Como les he comentado en ocasiones anteriores, me encantan TODOS los platillos que tengan una textura "crujiente", hoy comparto con ustedes una de mis recetas predilectas, su proceso es un poco laborioso, pero fácil de preparar. El secreto para disfrutar de un sabor MUY sabroso y apetitoso es condimentar bien la mezcla de huevos y harina... Pongámonos el delantal para realizar unas "exquisitas croquetas de berenjena".
- INGREDIENTS: 3 eggs, 1 large eggplant, wheat flour, liquid milk, pepper, garlic powder, dried oregano, sweet paprika, turmeric, pink salt, coriander and merkén to decorate.
- INGREDIENTES: 3 huevos, 1 berenjena grande, harina de trigo, leche líquida, pimienta, ajo en polvo, orégano seco, pimentón dulce, cúrcuma, sal rosada, cilantro y merkén para decorar.
- We start by preparing the mixture that will be the main base to enjoy a VERY delicious contrast! Add the eggs to a bowl, season with: pink salt, pepper, garlic powder, sweet paprika, turmeric and dried oregano. We mix until well integrated.
- Empezamos preparando la mezcla que será la base principal para disfrutar de un contraste MUY delicioso! Incorporamos en un bowl los huevos, aliñamos con: sal rosada, pimienta, ajo en polvo, pimentón dulce, cúrcuma y orégano seco. Mezclamos hasta integrar bien.
- Next, we add the wheat flour, along with the liquid milk, the mixture should be VERY creamy. To make this preparation I usually use wheat flour with leavening agent, if you use "all-purpose" wheat flour, you can add 1 teaspoon of baking powder... To soften the consistency a little we add a touch of milk.
- A continuación, colocamos la harina de trigo, junto con la leche líquida, la mezcla les deberá quedar MUY cremosa. Para realizar ésta preparación suelo utilizar harina de trigo con leudante, si utilizan harina de trigo "todo uso", pueden añadir 1 cucharadita de polvo de hornear... Para suavizar un poco la consistencia agregamos toquesitos de leche.

- We extract the skin of the eggplant, cut it into wheels, I suggest NOT cutting that thin. Add the eggplants, mix with soft and enveloping movements.
- Extraemos la piel de la berenjena, cortamos en ruedas, les sugiero NO cortar tan delgadas. Agregamos las berenjenas, mezclamos con movimientos suaves y envolventes.
- We add enough sunflower oil to a non-stick frying pan, add our eggplants, fry over "medium-high" heat until we check that they are golden brown on both sides.
- Añadimos suficiente aceite de girasol a un sartén adherente, incorporamos nuestras berenjenas, sofreímos a fuego "medio-alto", hasta comprobar que se doraron por ambos lados.
- Our eggplant croquettes were so appetizing and crunchy!

Amiiiii, lucen muy ricas esas croquetas de berenjena, la verdad jamas las he comido, de calabacin si hice una vez, debo de probarlas asi😍
Amiguita, tienes que probarlas con berejenas, quedan super ricas, recuerda quitar la piel y sazonar bien la mezcla.
