Best Cream Soup Ever

I made the best ever cream soup today. Since I got the recipe off the internet but then modified it myself I just want to tell you the generalities of how I modified it so that you can take whatever meal you like and make something amazing with it -- the second day.

The recipe I used called for roasting 4 poblano peppers and mixing with some onion, garlic, cream cheese, chicken and broth, and cheddar cheese.

The true trick is starting the day before with a good chicken meal. The standard of this meal will determine the standard of your soup.

I started with an Italian creamy chicken recipe. It had tomatoes and spinach in addition to the cream and spices. We ate it over noodles yesterday.

The leftover chicken and sauce went in the fridge, and today became the deep goodness of the chicken soup. Imagine just throwing raw chicken in a pot and calling it soup. Now imagine taking chicken that has been browned in butter with onion, garlic, and spices, then simmered in a deep cream sauce with a few tomatoes and chopped fresh spinach. Big difference.

Regardless of what any recipe tells me to do, I start by browning the onions in butter or oil. I'll add chicken or any other ingredients on top of that. I'll add the garlic a little later to prevent it from turning bitter.

So for the soup, I browned an onion, then took the roasted and peeled and seeded poblano peppers, ran them through the food processor, with a peeled head of garlic, and added them. Added chicken broth and cream cheese and some cheddar cheese.

Then I took the leftovers from yesterday and ran them through the food processor. I like having the veggies totally blended to be smooth in the soup. And I like the chicken being very finely chopped so that I don't get big chunks of it and have to choose between the taste of chicken and the taste of the yummy broth. I want all the flavors all the time.

It was amazing. I don't know who the first person was who figured out to add roasted poblano peppers to cream of chicken soup, but whoever you are, you are a genius.
