Breakfast is often neglected by myself... though on weekends that changes. Like today, and i felt like making one of those sandwiches. (Finally again)
It went all as planned - spring onions, mushrooms, with fried eggs sunny side up in butter on some home made toasted "Lizzie"-bread.
All went good... started toasting the bread, sautée the spring onions with the mushrooms in some butter. Added the eggs, drunk some coffee while slowly waiting for the perfect moment to put all of that delight onto the bread.
The final moment arrived and everything looked sooooooo yummy, that i just couldn't wait to eat breakfast brunch - actually...
And there was it when the sandwich became an open sandwich, eaten directly out of the pan. 😋
Lucky me, everything on or in bread is a sandwich anyways... remember, i even consider Pizza as an open sandwich. Hehe!
So here you have my BrunchOpenWich from today. It made me already think of another sandwich, but that's for another time...

Do your creations ever cease? Ha! I certainly hope not! As for this creation? What more could you want! Mushrooms, spring onions, coffee (because coffee duh!) Egg... and of course, that coveted Lizzie Bread... I can just imagine the aroma wonderfully traveling through the air... wow.
I do have to mention... love that blue egg holder! Ok!! I ignored the warning! I simply must get some coffee and food now! Thanks for sharing this with us brother 🙏

Yep, Sunny Side Up is the way to go... and first i thought: Dude, some bacon is missing! But actually nope...
You know, after 20 years working in British Pubs, somedays i really miss the "english" breakfast.
hehe somedays there is nothing better than a Scottish breakfast hehe, but yes an English breakfast is good too sometimes.
Yeah bacon can top off a meal, but eggs and spring onions like that on that bread and you don't need that bacon!
Got me hungry now bro!

BTW, what's the difference between a Scottish and an English Breakfast? Nobody never told me that part actually... 🤔 The only thing i know for sure, the Irish Breakfast is like an English, just bigger and with a Guinness. Hahaha
Well it depends on what the breakfast is made of. Scottish would have square sausage (Lorne) and maybe a slice of haggis and a tattie scone!

I live on sandwiches y'know. This is not good at all but... well... bread. And fast! And not much washing up ;)

So - Welcome to Heaven dear Nicky... and i do absolutely NOT agree with your saying that living on sandwiches is not good at all.
Ha, i used to live for years on these delights and i can assure you it's healthier then much of the food you can buy at most places... assuming you make them yourself with healthy ingredients!
