What to grab and eat on the run - a good old sandwich is what I usually go for - quick to throw together if you have the ingredients on hand.
Sometimes all I can find is one of my favourite pantry staples - peanut butter which does help keep the hunger pangs away. When I was a child, I used to love peanut butter and syrup on Mom's hot homemade bread, others have their peanut butter with jam (or jelly as some call it).
One of my favourite sandwiches though is filled with leftover spicy curry and topped with a grated carrot & mint salad we would enjoy with our curry.
So...my sandwich could have been made in a jiffy if I wasn't so fussy and would be satisfied with mass-produced store-bought bread, but I simply cannot eat bread that's full of preservatives and doesn't taste as good as the real thing!
I'd killed my sourdough starter, so resorted to instant yeast, but that was all that was instant about this bread.
The recipe doubled up to make a loaf of bread and 9 small bread rolls, all packed tightly into a pan and pulled apart when using them.

I always try and save some curry for an easy lunch of sandwiches the next day; those who love a spicy curry will also tell you how the flavour gets better the day after cooking it.
This curry leaf tree grows just outside my kitchen and is a real gem; one only needs a couple of these leaves to add even more flavour to the curry.

Almost forgot to show you my little patch of Mint happily growing in between sweet Marjoram.
Rolls halved and ready to be filled with curry, topped with chutney, and finally a grated carrot and mint salad with a light vinaigrette dressing.
I must add that these little rolls acting as sandwiches were not dainty at all, a big bite but very good indeed!

Simple recipe - to make 1 loaf of bread & 9 little fluffy bunnies I use 6 cups flour (any, usually 4 cups white & 2 cups brown or wholewheat) 2 teaspoons Salt, mix all up, make a well in centre, add 2 teaspoons brown sugar & 10 gram Instant yeast. Add approx 600ml lukewarm water - I sometimes use approx 200ml plain yogurt + 400ml water, liquid must be lukewarm. Knead till smooth, cover & let it rise in a warm place (wrap in a blanket in winter), knock down and shape into a loaf of bread & little balls for the bunnies. Let it rise in pans, but do not over-rise it, then bake at 180C for approx 50 min.
