Side-By-Side Roast Chicken Sandwich

I wonder just how many Sandwiches the average person has made in their lifetime?
As for me, I could put my head on a block when I say that I'd likely be a wealthy woman if I'd thrown a cent into a piggy bank for every sandwich I've made in my lifetime!

Those who know me, also know that I love to play experiment in the kitchen.

Sandwiches of course come in all shapes and sizes - square, triangular, club sandwiches, open-faced, stacked, wraps, and even pinwheels.
In fact, anything that belongs to the bread family, if there is such a classification, that has a filling of any kind, can be called a sandwich; bread rolls, wraps, flapjacks, pancakes, tortillas and more.

A specialty from my hometown that I've spoken of countless times is a Bunny Chow, a whole loaf of bread, hollowed out and filled with spicy curry, very yum!

When the bread is dry and almost past its sell-by-date, it can be revived by making a toasted sandwich in a sandwich press, or a fried sandwich, in the......frying pan, of course!

Jaffles is a toasted sandwich made in a jaffle iron - the poor sandwich would be pressed into a round-shaped kind of metal clamp with long handles and was best cooked over the coals on a BBQ.
These used to be the 'in-thing' when I was growing up; every woman who was a dutiful good wife, knew how to make Jaffles!

The role of married women in the 50s

Talking about dutiful women - The Good Wives Guide which actually was NOT published in the Good Housekeeping magazine in 1955 as some people claim, still gave hilarious good tips on how to make your man happy.

I'll let you into some of these secrets –

• Cook a delicious meal (or make him a good sandwich), so he knows you're concerned about his needs.
  What about the poor wife?
• Clear the clutter, dust all surfaces, light a fire in the winter month, tell the children to be quiet, smile and be happy when he arrives, do not complain, tie a ribbon in your hair and touch up your make-up, and don't forget to rest awhile before he arrives, so you look relaxed.
  I'm not sure how you'll find time to rest after doing all of this!!!
• No complaints, even if he stays out all night!
  HUMPH, that will not happen in my house!!!
• Arrange his pillows, and speak in a soothing voice!
  ...and what about mine?
• A good wife always knows her place!
  Where might that place be, I ask!

I'm sure no one has ever written this guide, so how about it ladies, I think it's high time someone comes up with this guide ;)

Back to sandwiches

I only had a couple of slices of saffron & rice bread left, plus some leftover roast chicken, and did not feel like making a toastie, nor a regular sarmie, so thought I'd try to make a Side-By-Side Sandwich.
This kind of playfulness in the kitchen would have been frowned upon back in the 50s, especially by the most important man of the house!

The leftover chicken was slathered in a rich gravy made with pan juices, so all I used to spread on the bread, was cream cheese, and filled with pulled chicken & gravy.

Nicely layered, but looks like a stack at this stage!

And then gently turned the sandwich on its side, and we end up with a delicious...

This dutiful? wife made her man very happy when she called him to the lunch table, on time for a change, with a big smile on her face...without a ribbon in her hair...and minus the make-up.

The big smile turned into a chuckle when she saw his puzzled look at how to tackle this sandwich:)

Was it good, and was he happy?
Yes, and so was she!
