Ingredients:
1 Cup Unsweetened Shredded Coconut
3 Cups Water
Pinch Sea Salt Optional
Instructions:
Place coconut, water, and optionally salt in a blender. Blend on high for 60-90 seconds or until completely blended.
Strain the blended mixture through a cheesecloth or nut bag. You will need to squeeze until the coconut is mostly dry.
Store in an air-tight container for up to 3 days in the fridge.
Enjoy in your granola, baked goods, or smoothie.

Wow, that's easy! I must try it.
In the Philippines, we use pure fresh coconut milk, no added of anything. It's light and super delicious. We usually have it though for cooking or using it as toppings for sweets.
If fresh coconut was readily available, I'd love it too!
