You are right that human health primarily depends on what he eats. Only you forgot about another function. Similarly, a person's health depends on his lifestyle and the state of the environment in which he lives. If you consider all this, you can maximally improve your health. For 2500 years much has changed and medicine has become much better. The human body, unfortunately, is still not fully understood.

I agree with the notion that health is correlated with diet, as well as, lifestyle, however, all modern medicine is based around curing symptoms instead of conditions. Allopathy is a practice in reducing the symptom, not curing the disease.
