Hi, glad you said 'steep' rather than 'boil' as I've heard that boiling the needles with destroy the vit C.
Cat-Tails would be a good one to do, lots of uses (food and otherwise).

Cat-Tails have edible roots, shoots and pollen. The fluffy 'sausage heads' are a good flash-tinder or can be charred for flint n steel fire starting :)
