This is really good post and I've upvoted it as I believe that education is very important.

Just would like to add here that you can make a salad out of vegetables and add some nuts to get nutritionally rich meal that contains omega-6 and omega-3 fatty acids in good ratio.

Also, when eating vegetables, I like to combine with cottage cheese to get enough protein along with the fibers.
