I think the purpose of this restaurant is really wonderful!!!
I mean, we will all grow old one day. That is if we're allowed of course and don't die young first!

So imagine if we would end up with dementia as well or something similar !! Nobody likes to be sick or in pain.
I don't think they like it either! So instead of putting these people at the side it would be nice to show some respect and as you mentioned above "with patience, kindness, acceptance and tolerance towards dementia patients"!!!
That's all they need!!
