My second half asked me for a prepare something healthy for a lunch
Then I was thinking what kind of lunch could be healthy for me but also won't be hungry an hour later
And then I got it...Vegetables and carbs together - vegetables for your health and carbs for full feel stomach
So we're gonna need:
- Kale - full of very different nutrients such as vitamin K,A,C, manganese, copper
- Barley - whole grain -it means good carbs what fill you for few hours
- Tomato - lutein, betacarotene, lycopene (protects body against cancer)
- Bell Pepper - Vitamin A, C and B6
- Cucumber - Vitamin A,C and folic acid
- Lemons - Great for your digestive, balance body PH and of course rich of vitamin C
- Parsley - vitamin K, C, A, folate and iron
So now you know what we are gonna need for this amazing recipe and here is Directions :)
Cup of barley put into a pan and add 1 litre of water and 1 cube of vegetable stockfor extra flavour and cook for 1 hour
After 1 hour it should like this - nice and fluffy
Then you "massage" your kale with juice of 2 lemons
Chopped your veggies up
Mixed everything well add some salt and pepper
And we are done!
I serve mine with some Falafel balls and you can also add some hummus - it will taste Delicious!
