Healthy fast prep food is where it's at!
Commuting? Take it with you.
Here’s one that I eat right out of the blender :)
You will need a high speed blender like the Vitamix or Ninja or Nutribullet that will pulverize full vegetables.
There are a zillion ways to make Gazpacho…don’t think of it as cold soup..
Think of it as eating salsa in a bowl with a spoon!!
Tomatoes are full of antioxidants and Vitamin C.
I'm in California so some of the brands mentioned are local brands. You can find the same ingredients almost anywhere in similar latitudes. I've checked :)
Please read the recipe first and always try to use organic ingredients:
Michele the Trainer Gazpacho
5 organic large red heirloom Tomatoes (lg red heirloom)
Half purple organic Onion
Quarter bunch organic Cilantro
3 organic Persian Cucumbers
2 tbsp Bariani Olive Oil
2 tbsp Braggs Apple Cider Vnegar
3 cloves organic Garlic
2 tbsp Celtic Sea Salt
PULSE the blender if you want it chunky.
<<enter blender sound effects here>> bzzt bzzt bzzt
You can garnish with organic Haas avocado cubes, thin sliced jalapeno, etc..
I use organic ground Chipotle (hot) peppers…..
