Of course this is all fucking stupid, and these people are fucking idiots. If cuphead is ableist, then every single FPS is ableist, because not everyone has the motor control to play them. They're not! This isn't.
Cuphead is just a platformer. There have been a fuckton, many of them hard as fuck. It's just been a long ass time since we've had actually difficult video games. Mario Bros was hard as fuck, and the Nintendo controller buttons were hard as fuck, so your thumbs would be rubbed raw. Was that ableist, because some people couldn't play it? No! It's the game style.
Not everyone is good at every game style. But there are TONS of different styles of games. You play the ones you like, and/or are good at.
The art style is reminiscent of a style of American cartoon cinema from a time when there was a lot of racism, but an art style can't be racist. That's just fucking stupid. If they wanted to point out something specific, it would be different, but they're just showing how fucking stupid they are.
I feel as if they went after it because it was a hot and trending title so they exaggerated whatever they could out of it to try to push whatever argument they can. I tend to see this with entertainment all the time because it's their easiest method of arguing a point but not having much opposition. It's silly but this to them is an easy way to feel like they have something to fight for but not have to truly invest in said fight all the while make easy to claim and digest points.
