GANGBAO CHICKEN WINGS

 Chicken wings marinated in butter milk mixed with sparkling water,salt,peper,paprika.      
                                                                                                                                                                                                                                                    
       ( USED 3 PARTS SPARKLING WATER AND 1 PART BUTTER MILK FOR 400G OF WINGS)

The butter milk plays the most important part because it tenders the meat giving it a soft texture and sparkling water practically helps to infuse the meat with the rest of the spices.
This reciepe cand be adapted to all kinds of meat ,less for the beef. You can add more spices according to your taste and more important is the way that you marine the meat . I started like this.
First i chopped off the unwanted part from the wing, let it sit in cold water while I prepared all the ingredients then I drayned the water ,mixed the meat with the spices , poured the sparkling water then the butter milk. Here is where I had to act fast because you do not want the water to lose bubbles.Wisked the marine once then I sealed it with plastic film and let it sit for 12 h.
When I took them out , I let them drain a bit and after that I mounted them on skewers,flocked trough flower mixed with sesame seeds ,then threw them in the deep fryer for about 2-3 minutes.
The garnish is at your choosing , I made fryed wedges with parmesan and garlic.

Tomato, mixed olives smoked ham, bell pepper, 3 colors goat cheese, eggplant salad , beated beans on
onion , turkey jelly ,carp caviar,pork rind held in salt,bacon

It may not seem a big deal but it took about 14 h with three people to prep al the ingredients for the dish and another 2 to mount them on the plate .
Down at the restaurant when we have a wedding event ,things start to get tense from the early hours for different resons :
The dishwasher got drunk
Some idiot forgot to order the meat or cheese
Some waiter stumbles on a bunch of plates and we do not have spares for the service.
But there are days and days , crappy days and good days. When this event occurred , it went really smooth and steady despite the personel crisis, we were a bit late with the service but on top of that all the guests were pleased and happy .
A wedding party ussualy begins at 19:00 -20:00, that is the time when the guests start to arrive, of course they have cocktails first, talk to eachother , take photos with relatives, the have some more cocktails and then they get hungry.
We start giving the appetizers at 21:00 , that’s is the crappy part because you have too kepp an eye on the servers so they wont`t take more than 3 at a time, they have to take the plates in order, just because the plates are spreaded everywhere that dosent mean that they can take at will .

From 2 to 2 hours we serve the couses
Example:
20:00 - Apetizers
22:00 - Fish with sote vegetables
00:00 - Cabbage rolls with polenta and cream
02:00 - Steak
03:00 – Cake
Of course there can be delays from the program, the guests might arrive a bit late , or just half of them can be late ( WORST THING THAT CAN HAPPEN) if that happens all serving times are dellayes .
