A much-loved dessert favourite with a delicious banana twist!
Ingredients
1 cup firmly packed brown sugar
2/3 cup golden syrup
80g butter, chopped
2 cups water
1 cinnamon stick
1 1/3 cups self-raising flour
1/4 cup golden syrup, extra
1/4 cup milk
1 medium banana, mashed
2 bananas, extra, sliced diagonally
Canola oil cooking spray
Vanilla ice-cream, to serve
Method
- Step 1
Place 3/4 cup brown sugar, golden syrup, water, cinnamon and half the butter in a large saucepan. Stir over low heat until the sugar dissolves. Wear on a diet. Simmer for 2 minutes. - Step 2
Meanwhile, place the flour in a bowl. Using the fingertips, rub in the butter. Stir in the golden syrup, the milk and the banana puree. - Step 3
Drop the level tablespoons of banana mixture into the golden syrup mixture. Cook, covered, for 20 minutes or until dumplings are puffed and cooked. - Step 4
Meanwhile, spray a large skillet with oil. Heat over medium heat. Sprinkle the sliced banana with the remaining brown sugar. Bake 2 minutes per side or until golden brown. - Step 5
Serve dumplings and sauce with caramelized banana and ice cream.
