I love maple pecan pie and I was always wondering how I can convert it to a healthy version, using no flour, no refined sugar, only healthful ingredients. This is how I came up with this Raw Vegan Maple Pecan Pie recipe, which is sooooo delicious, that even my non-vegan family LOVES it! :)
Raw Vegan Maple Pican Pie recipe
Ingredients for the base:
- 2 cups pecans
- 1 1/4 cups dates
Ingredients for the filling:
- 1 cup soaked cashews
- 1 cup coconut oil
- 2 cups dates soaked in water for 2-3 hours
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1 cup shredded coconut
- pinch of salt
- 1 box of tofu (395g)
For the base, roughly chop pecans in the food processor, then set them aside and do the same with dates. Mix both ingredients together and press it in a pie form with your hands. Put it in the freezer while you are making the filling.
For the cream, put all the ingredients in a blender and blend them until very smooth. Pour the filling on the crust and put it back to the freezer for 2-3 hours. When you take it out, decorate it with pecans and pour a little maple syrup on the pecans to make them shiny. Keep the cake in the fridge (if there will be any leftover :D )

This looks so good. Is it hard tofu or silken tofu?
Actually it works with both. If you use silken tofu, it's gonna be obviously softer, but sometimes I can't find it in the stores, so I buy hard tofu and it works very well, too.

Hmm do you know, why you soak the dates? im thinking, you get sugar from them and a bit of stickyness, which i can see, could help?
