Sort:  

2 cups flour, I use unbleached all purpose
3/4 cup lukewarm water
Salt, generous salt
4oz~ of yeast.

Add Yeast to water, mix in flour and salt, then start to knead it and add more flower (not a lot) as you go until it is sticky like bubble gum. Cover with olive oil and let sit in a bowl (covered) on the counter for an hour to rise or leave it in the fridge.

Nothing too fancy.
