This coconut pudding is very easy to make and also has a lot of flavor. Therefore, if you want to accompany tea or coffee for breakfast or snack, you can not miss this recipe that is super simple and is prepared with few ingredients. Put a lot of sweetness to your day with this exquisite recipe of pudding or coconut sponge cake. Delight your friends and family with this dessert. Ingredients:
*250 g of sugar
*250 g of butter
*350 g of flour 0000
*4 eggs
*4 tablespoons of milk
*8 spoons of grated coconut
*4 teaspoons baking powder
Elaboration step by step
To make the coconut pudding, place the butter in a blender together with the sugar and beat for a few minutes to form a cream.
Add the eggs one at a time and continue beating until they are incorporated.
Add the previously sieved flour together with the baking powder and stir with a wire whisk.
Alternate with milk and grated coconut, always mixing so that lumps do not form.
Pour the mixture of the coconut pudding into two half-kilo molds, previously greased with butter and sprinkled with grated coconut.
Take the molds to the preheated oven at 180 ° C for 60 minutes or until, when introducing a toothpick it comes out dry.
Unmold the coconut pudding on a rack and let cool.
The coconut has antioxidant, immunostimulant, antiparasitic, bactericidal, hepatoprotective, and other properties. On the other hand, it has vitamins and minerals such as magnesium, calcium, iron, phosphorus, iodine, selenium, zinc, manganese, among others.
