Sometimes homemade comfort food is exactly the the cure for what ails you. In our house we have had a lot sickness come through combined with some busy schedules and this equation called for some homemade one pot mac and cheese.
One Pot Mac & Cheese
-2 Cups of your favorite pasta
-2 1/4 cups milk (I use whole for extra creaminess)
-1/2 Tbsp of butter
-3/4 tsp salt
-1/4-1/2 tsp pepper (optional)
-1 1/4 Cups shredded cheese of your choice
Add milk, butter and pasta and bring to a boil. Add in salt and pepper and stir frequently to avoid pasta sticking to the bottom.
Cover and let simmer for 10-15 minutes depending on your pasta until it is cooked to your preferred tenderness. Continue to stir frequently to avoid pasta sticking to the bottom.
Once the pasta has absorbed the milk and is ready for the cheese it should look something like this.
Remove from heat and add in cheese and combine all together until cheese is melted. I like to mix my cheese up. Sometimes smoked Gouda, or Cheddar and Parmesan, Swiss and Gruyere. The possibilities are vast.
