Here's my entry. I made this for last week's dinner. This my own mugna2x recipe.
In a heated pan, saute some minced garlic and onion. Once the onions are softened, add ground pork and season with salt and pepper. Once cooled down, whisk an egg and mix with the ground pork. Set aside.
Roast egglant in the oven or grill it on the stove top. Once the eggplant is softened, peel it and flatten with a spoon. You are ready for frying. Just dip the eggplant in the pork mixture, put the eggplant in the heated pan and pour the rest of the mixture on top.
For added color and flavor you can add red and green bell peppers to the ground pork mixture.
Easy peasy right. I hope you guys like it.
