Shrimp and meat tapioca flour

Vietnam is a country of cakes made from sticky rice eg: Cassava cake, Chung cake, gio cake, shrimp cake, nam cake, tro cake, day cake, sticky rice cake, ..These delicious cakes are all wrapped in banana leaves. Shrimp and meat tapioca flour cake is a originally a steamed street snack from Hue (Central region)- Vietnam.😝😋 It’s a small, savory snack great any time of the day, made with a tapioca flour outer layer, pork and shrimp filling and all with a special aroma from a banana leaf wrapper. This cake contains little meat and shrimp if I eat them at a restaurant or on the street so, I make my own cake at home and add more filling to the cake. Sweet shrimp and pork encased in a translucent and chewy dumpling skin make these some of the best cakes around. You can freeze the uncooked tapioca cakes in the freezer for up to 1 month so I always make a big batch about 80-100 cakes at a time.🤤 For the next use, no need to defrost, just take them out and steam. Just smell it and feel a craving, now i will show you how to make my cake:

Ingredient:

  • Shrimp
  • Bacon
  • Bread flour
  • Banana leave
  • Scallion
  • Salt, pepper, fish sauce, cooking oil, cashew oil

1. Wash banana leaves under running water to clean. Cut into ~5×8 inch , depending on the size cake you want, removing tough areas around the stem that are hard to fold. Should dip banana leaves into hot or boiling water to make it soften and easy to wrap. Set aside to dry before use.1. Rửa lá chuối dưới vòi nước cho sạch. Cắt thành ~ 5 × 8 inch, tùy thuộc vào kích thước bánh bạn muốn, loại bỏ các phần cứng xung quanh thân bánh khó gấp. Nên nhúng lá chuối vào nước nóng hoặc sôi để lá mềm và dễ gói. Để khô trước khi sử dụng nhé.
2. To eliminate any foul smell of pork, clean the pork belly thoroughly by rubbing it with salt. You can grind the pork or cut the pork into small pieces. Bare shrimp in water and then peeled. Add pork and shrimp into a large bowl, add some ground pepper, salt, fish sauce and mix them and marinate for 15 minutes to absorb the seasoning. Saute them in cooking oil until meat and shrimp are cooked about 5 minutes.2. Để khử mùi hôi của thịt lợn, hãy rửa thật sạch bụng lợn bằng cách xát muối. Bạn có thể xay thịt lợn hoặc cắt thịt lợn thành từng miếng nhỏ. Trần tôm trong nước rồi bóc vỏ. Cho thịt heo và tôm vào tô lớn, thêm chút tiêu xay, muối, nước mắm trộn đều rồi ướp trong vòng 15 phút cho thấm gia vị. Xào chúng trong dầu ăn cho đến khi thịt và tôm chín khoảng 5 phút.

3. In the bowl of a stand mixer, add tapioca starch, boiling water, salt and cooking oil, knead the dough until it is smooth. Flatten the dough into a circle. Add filling onto one side of the circle one piece of pork and one shrimp. Fold the dough over to encase the filling and seal the seams. Place them inside the banana leaf and fold it into a rectangle.3. Trong tô trộn cho bột năng, nước sôi, muối và dầu ăn, nhào bột cho đến khi bột mịn. Vo bột thành hình tròn. Thêm nhân vào một bên của hình tròn, một miếng thịt lợn và một con tôm. Gấp miếng bột lại để bọc nhân và dán các đường nối lại. Đặt chúng vào bên trong lá chuối và gấp lại thành hình chữ nhật.

4. Finish wrapping, repeat until you use up all your ingredients. After finishing wrapping step, place all the cakes into steamer, steam the cakes for 20- 30 minutes. After 30 minutes, take the cakes out and place on the plate. The cake is best served when it is hot. You can serve thiscake with chili sauce or dipping sauce ( mix fish sauce with chili, lemon and sugar.)4. Gói xong, lặp lại cho đến khi dùng hết nguyên liệu. Sau khi hoàn thành bước gói, bạn cho tất cả bánh vào xửng hấp, hấp bánh từ 20 - 30 phút. Sau 30 phút, lấy bánh ra và bày vào đĩa. Bánh ăn ngon nhất khi còn nóng. Bạn có thể ăn kèm bánh này với tương ớt hoặc nước chấm (pha nước mắm ớt, chanh và đường.)
