Nice.
This one of my favorite food. "Indian style lentils". It is healthy, healthy and suitable for vegans

The preparation is very simple, let's go to it.

First we mashed the garlic and the ginger, I did it with a blender. Then in a pan we place the mashed potatoes, the onion, the carrot and the pepper and cook it for about 10-20 minutes until we see that it is to our liking.

On the other hand we will prepare a very simple sauce: we need the juice of a lemon, a little cumin and parsley, we mix everything very well.

And finally: as the red lentils are ready in about 20 minutes, we put them in the pot, with the refried we have made, a glass of water and another glass of vegetable milk. When you have 5 minutes to be ready add the sauce and let it finish cooking. And ready!

The carrot is a great source of vitamins, minerals and especially beta-carotene, important for vision and skin, the pepper also provides beta carotene in less proportion but also contains important vitamins such as C and B6. Ginger is a super anticancer food and is a great help for the whole body, the onion along with garlic that serve to cleanse the body of toxins.
And red lentils apart from providing us with many vitamins, are easier to digest than normal lentils, although they contain less fiber, but with the amount of vegetables we have used, nothing happens, because we already have a large supply of fiber.

I'm Spanish, if you find any spelling error, let me know. Thank you!
