Last Christmas...


I gave myself a shot at cooking and not just some beginner's dish but something a little bit more intermediate. I was going to host a Christmas party for my friends at my house and I've decided to make roasted crispy pork for everyone. Turns out, it was a success and was one of the dishes to be gobbled up by my guests and they even wanted more. This.... gave me the satisfaction that I was able to feed my guests and they were happy. I guess I understand now that why people can spend hours in the kitchen cooking up some dish just to serve them to others. Even if the chef himself doesn't eat his own food.

The New Year came and ever since a friend of mine moved in, I've been enjoying cooking up simple dinner meals for her. I wouldn't be doing it if I was staying alone because it'll be boring. I guess you can say that I'm 'one of them' now because I love people enjoying what I've made.

Although sometimes still a tad bit too oily and salty, I'm learning various ways and apparently, cooking isn't that hard to learn. It just needs a little bit of direction and finding the right ingredients. I tried out the easier meals such as frying vegetables such as carrots, lettuce and garlic which was just a 10 minutes cooking meal. That was successful but my heart was still wondering if I could do something even more.

And so, I've decided to hit the grocery store today in the afternoon to get me some ingredients. I was planning to make a simple chicken chop with garlic herb butter sauce, garlic-herb roasted potatoes, and salted asparagus as a side dish. Gotta get those greens in ey.


Kitchen Work



Yuna helped me with prepping and seasoning the potatoes before going into the oven. I used some vegetable oil (because I forgot to get some olive oil), parsley, Himalayan salt and minced garlic. Put the potatoes in a bowl and toss till it's covered in the seasoning. Put a baking sheet down and in it goes into the preheated oven at 400F. This needed sometime to roast so we prepped this first. Took about 45 minutes to roast the potatoes.


With the leftover seasoning from the potatoes, I decided to just season the asparagus with it. This is a really quick and simple way to create a healthy snack. No more than 15 minutes. I washed the asparagus, toss em in the seasoning bowl and off it went into the oven at 375F for about 10-12 minutes. The asparagus would be tender by then and really nice for a snack. I decided on going this because my chicken and roasted potatoes would take sometime to prep so I planned for my vegetables to the quick and easier ones. Nothing complicated and I believe even kids would love this as tea time snack.


Okay, I probably added too much cooking oil onto the pan which made everything a little too oily later on. Also because I needed to add butter for my gravy. I pan-seared my chicken flipping only once. That way, both sides would be a little charred brown, the way it's supposed to be. I took the chicken out and placed them onto a plate while I prep the sauce to bath the chicken in.

I threw in the chopped garlic (about 3 cloves), 3 cubes of butter (about 2 tablespoon), thymes, rosemary, oregano and chicken stock. This would create a really fragrant and delicious buttery base for the chicken chop. I stirred them for a minute and I placed the chicken on base the sauce on it. Cooking it for about another 8-10 minutes. Yuna wanted some eggs so she fried her own eggs after that.




The outcome of the meal was still pretty satisfying. Though a little bit too oily and salty, I enjoyed every moment doing up this dish. I would probably learn how to properly season my stuff next round and how to use just the right amount of oil. I guess all you great cooks have any nice recipes or ingredients you would like to share, @jaynie or anyone else? I may just try it out next time and do a post on that too.

Try using olive oil when you baked.. much healthier not not necessary more affordable. Also, try boiling the potatoes first before you put into the oven. Reduces the baking time by more than half. And halfway through, you ca add in the asparagus.. then it will be cook at the same time.

Oh yea... I didn't have olive oil that's why. Ooooo, I remember making potatoes when I was at your house during Christmas. Simon taught me. Haha

Oh yes.. he's a Masterchef for baked potatoes now :)

See!!!! You were a closet chef all along!!!! hehehe!! So happy to see you doing this!!! And that plate of food looks pretty damn impressive! Now you have NO excuses to cook for us when we DO eventually visit you... which we will... hopefully in this century haha!!!

OOOOOO for sure I'll make the roasted crispy pork for you! Haha, It's a tad bit oily and salty. Will learn to cut down and put the right seasoning. Any @jaynie inspired dishes I can make?

hahaha yeah you have to be careful with the salt on pork as the fat is pretty salty itself. As for Jaynie inspired dishes.... let me give that some thought :P haha! Oh and I cannot remember if I mentioned this in my original comment (too lazy to look)... it is looking VERY positive that we will be coming up in June. Third time lucky haha! (hopefully) Cannot wait!

Hahaha, omg.... U making me excited every year... Okay, maybe third time is the charm! Give me ur exact date when you confirm confirm! Hahah
