I was going through old photos and I found this one, which inspired me to make a replica of this yummy breakfast this morning:
A piece of wholemeal toastie bread made at the local bakery (none of that industrial stuff), smoked salmon, plain creamy Greek yogurt, fresh dill, smashed avocado with cumin, salt, coriander and a dash of lemon juice and a bit of apricot jam.
So simple, yet so delicious. I should find the time to indulge like this every morning!
Looks great, I probably wouldn't eat this dish for breakfast but definitely for every other meal.
It also makes for a good brunch or evening snack.
