And also in Japan to eat fish more raw than fried. And we have more fried in Ukraine. Since we simply do not physically withstand the body of raw fish, as culture and minaletets are different.
But all the same, the culture of Japan is wide and rich, as it is known all over the world. Because the products that are used in Japan to prepare sushi are transported all over the world. For example, tuna is a very popular fish that can be found in any country.

How this fish is processed? And why it can be eaten raw. Because the tuna is cut already into parts and it is vacuumed and frozen by shock freezing. Shock freezing in the kitchen is 1200 degrees. All harmful bacteria die. And when it is defrosted it does not lose its marketable appearance and it can be eaten.
