Amish Macaroni Salad

This is a traditional Amish recipe. I normally don't add sugar. I prefer Cajun seasoning instead, but I didn't make it my way in this recipe.

I like cooking in bulk. It saves me a lot of time and money. I made a lot of macaroni salad in this video. You can use half or a quarter of the ingredients, or make this large batch for your family and friends. It's great for parties and picnics. It stays fresh in the refrigerator for almost a week. It doesn't freeze well.

Amish food is very simple and basic. They don't really eat anything fancy or exotic. I lived in Lancaster County, Pa briefly a few years ago. Lancaster County has the highest number of Amish in the US. There are no Amish people outside of the US. I actually lived in a house where the show Amish Mafia was recorded. That show is 100% completely fake and scripted in Hollywood.

INGREDIENTS

2 pounds elbow macaroni

2 large yellow onions

8 stalks of celery

6 hard boiled eggs

1 large green bell pepper

5 cups of mayonaise

10 tablespoons of white vinegar

2 tablespoons of celery seeds

10 tablespoons of yellow mustand

10 tablespoons of dill relish

2 cups of sugar

Sea salt
Black pepper

DIRECTIONS

Boil the macaroni.
Boil the eggs about 15 minutes in water with a splash of vinegar.
Dice the bell peppers, onions, and celery.
Drain the pasta and run cold water over it in the strainer for about 20 seconds.
Cool off the eggs with cold water and dice them.
Add the mayonnaise, vinegar, mustard, sugar, celery seeds, salt, and pepper.
Stir well.
Enjoy!

This macaroni salad pairs very well with grilled cheese sandwiches.
