I told you about my first gnocchi. I discovered that I like making them quite often with different sauces. This recipe is with a sweet sauce so it is a dessert more than a side dish.
Ingredients for gnocchi:
2 potatoes
2 cups of flour
1 egg
Ingredients for sauce:
2 cups of blueberries (frozen or fresh)
1 cup water
Vanilla extract
1 cup sugar or 1 cup dates (left in water overnight)
Directions:
Gnocchi:
In a pot add water and salt and let it boil. Peel the potatoes and add them in the pot. Cook them for 15 minutes. They should be firm and tender. Drain, cool and mash them with a fork.
In a bowl combine the egg, flour and mash potatoes. Knead until you have a ball. Shape small portions of the dough into long “snakes” and then cut them in small 2cm pieces.
Bring a large pot to boil. Drop in the gnocchi and cook them for 3-5 minutes or until they have risen to the top. Drain and then serve them.
Blueberry sauce:
Place 1 1/2 cups blueberries in a small saucepan. Cover with water and add sugar or dates and vanilla. Heat over medium-high heat until mixture comes to a low boil and blueberries just start to break apart.
Turn heat down and simmer on low heat for 2-3 minutes, or until sauce reaches desired consistency. Add water, one tablespoon at a time, if the sauce gets too thick.
Remove from heat. Add remaining blueberries and stir gently. Serve it warm or cold on top of the gnocchi or add the gnocchi in the saucepan when the sauce is done.
