All my recipes are easy, vegan, healthy, nutritious and delicious. This one is perfect for van nomads, as it only requires one pot and a single stove burner. I grew up eating black-eyed peas and we even had them fresh from our garden. They are a traditional southern, comfort food.
Soak a cup of dried black-eyed for 6 or more hours in 3 cups of water and drain. Refrigerate until time to cook, up to 3 days.
I make a soffritto first by slowly cooking 1/3 cup each of finely chopped carrots, celery, and onions in olive oil. Then add a clove of finely chopped garlic just before adding a cup of dried black eyed peas and 3 cups of water. Bring to a boil and then simmer until black-eyed peas are tender. Add black pepper and salt when simmering. I also add three dried chiltepin chilis for a touch of heat. Cooking time an hour to an hour and a half. If you put them aside in the fridge for a day or two the flavors will marry and be even more delicious. Can be served on top of brown or white rice.
Total cost is under one dollar for all ingredients and two meals.
