V.W.P Vegan Weekend Pancakes - Fluffy gluten free and sugar free vegan pancakes! Sounds to good to be true? Recipe!

Hi again my dear friends and steemians! I had little break yesterday from posting here, but now I am back with a new recipe! I am so excited to share this gluten free and sugar free pancake recipe with you guys because I know there are many people out there turning their diet to a healthier one! I love healthy food and my vegan diet and sometimes I feel that I need something very special, on weekend mostly. I than quite often make pancakes and add the most delicious and crazy toppings I can find in my kitchen. So I invite you to do the same today!

Here is the recipe:

makes 7 big fluffy pancakes:
1/2 cup sunflower flour
1/2 cup millet flakes
1/2 cup oat milk or other plantbased milk
1 big soft cooked apple
1 tbsp merlot wine flour from @wineflour (or add the taste you like)
1 1/2 tsp baking powder and 1 tsp apple vinegar
Directions: let the apple vinegar and baking powder react in a bowl a few minutes. Blend all the other ingredients until smooth. Than add the baking powder mixture with the batter. Let it set a few minutes.
1-2 tbsp for 1 pancake. Flip around when you can see bubbles on the surface. Enjoy warm with warm homemade jam by cooking 1 cup berries with a splash of lemon juice. Blend to make it smooth. Enjoy😋
I added a lot of peanut butter, berries and banana to my pancakes. Because there aren't enough toppings days like this! 😂👌😁
