One of my favourites of the Chinese cuisine. Homemade dumplings with meat and mushroom stuffing.
For the stuffing, you can use anything to you liking. These ones were made of minced pork but you can use beef, seafood or vegetables like cabbage. You can boil the vegetables a bit and then cut them into smaller pieces.
For the meat ones, use minced meat and put them into a bowl.
Add some chopped spring onions and chopped mushrooms.
Add some oil and salt and stir it all together. Stir it all well that everything is mixed equally. You might have to add some more oil while steering. It will help to stick it all together.
Prepare some dough, just use some flower and water and make small balls out of it. Then roll them into small pancake shapes.
Once you have these ready, put them on your palm and use a spoon to put some of the stuffing onto it.
Fold and pinch the the middle of the pancakes edge together to make it stick together, now start at one side pinching the ends together and try to make folds by overlapping them.
You got your first dumpling, now do the rest of them.
To prepare them, boil plenty of water in a pot. Add some of the dumplings into the boiling water and wait for the water to start boiling again. Keep steering in the meanwhile to avoid them sticking to the bottom.
Add cup of cold water and wait till it starts boiling again, keep steering.
Add another cup of cold water till it boils again. Now they are ready to be scooped out, just put them on a plate and make just to jiggle the plate every now and then otherwise they will stick together.
Boiled and ready to be eaten! As a dressing, put some soy sauce in small bowl. Chop some garlic and add it to the soy sauce. Add some chilly flakes and bit of black vinegar. Dip the dumpling and enjoy.
I love making my own dumplings/wontons. I make them and then I make wonton soup :)

Updated the post. Show us when you have made those. It's a fun activity to do with the family. I have made them a few times with Chinese new year and other occasions with friends. It's a common thing that the families do with the Chinese new year, they gather around a table and make dumplings together.
You know, a lot of cultures do that - with food that takes a lot of work. Then, it becomes fun! The visiting is more important than the food making. Love it. Thank you so much for the update!!
