Peas: another dairy free dish to enjoy during lent!

Peas is a smart food as it is high in proteins and law in calories. Morever peas are really tasty as they have a rather sweet taste.

Ingredients: 1 kg of peas (I bought the frosted one as I couldn’t find fresh; nevertheless if you find fresh you must prefer it!), 1 ½ onion chopped, 2 carrots chopped, 1 tbsp of tomato paste, 200 gr of tomato concasse, 1/3 of fresh dill bunch chopped, salt and pepper, 3-4 tbsp of olive oil, little water (preferably broth)

We sauté the onion and the carrots in the olive oil. Once the onion becomes light brown, we put the peas, keep stirring, then put the tomato paste and the tomato concasse. We keep stirring. We add some water so as to cover the peas. We add some salt and pepper to taste, cover the pot and leave the food simmer in medium to law fire. Timing depends on the peas you use. Average cooking timing is 30’. The dill is added in the end.

When you serve you may add a few drops of olive oil.

These are green peas, yes? Can I use canned ones? Or is it better to choose frozen ones as a better choice if there's no fresh ones?

Frozen tend to hold the vitamins better than the canned ones. I would prefer the frozen ones..
