Automn green beans stew

I chose to make a nice vegetables stew full of good vitamins! Apart from the green beans which was the main ingredient, I used stuff that I have in my fridge, such as tomatoes which for some reason are very good this time year (I guess we had a pro-longed summer here in the mediterranean), potatoes, carrots, a courgette and as usual no salt – but of course feel free to add according to your preferences!

Ingredients: 800 gr green beans, 4-5 small peppers chopped, 3 tomatoes melted, 2 carrots finely chopped, 1 zucchini finely chopped, 2 onions finely chopped, 2 big potatoes cut in pieces, ½ cup of olive oil, pepper, 1 cube of vegetables bouillon cube, 400 gr hot water

Wash and chop the onions, potatoes, peppers, zucchini and carrots. Melt the tomatoes to create a sauce. Wash your green beans and cut the edges. Sometimes you need to omit the strings from the side of the green beans, but these ones where baby beans and so fresh so no need to.

Chop your onions and saute them with the olive oil in your pressure cooker in medium fire. Add gradually your vegetables while tossing. First the peppers and carrots, the potatoes, the tomatoes. In the end add the green beans, the zucchini, the cube and the water. Toss well and add pepper. Close the pressure cooker for 50 min first in high fire and after 10’ in law fire to slowly cook.

Open and check they are done. Serve with a nice piece of cheese or olives or whatever your preference is.

Now, in Greece we call this kind of cooking “a stew” or “cooked in olive oil” (my translations don’t depict the Greek words I am afraid!) and most of the times contains potato, olive oil and garlic. It is made in the pot. This is my today’s inspiration of a nice vegetables’ stew.
