How to make Minty Asian Chicken Salad.
This recipe can serve 4, and is ready in 10 minutes.

2.00 chicken breasts | |
0.50 cucumber | |
4.00 tbsp fish sauce | |
1.00 lime zest | |
20.00 g mint | |
1.00 red chilli | |
250.00 g rice noodles | |
3.00 spring onions | |
2.00 tsp sugar |
Cooking Instructions
Step 1
Soak the noodles for 5 mins in boiling water or according to pack instructions, until softened.
Step 2
Drain, then cool under a running tap.
Step 3
Drain again well, then tip into a large bowl along with the chicken, cucumber, spring onions and chilli.
Step 4
Mix together the soy or fish sauce, lime zest and juice and sugar, then pour over the noodles. Toss through the mint leaves and serve.
