Super Easy Chili Beans

Happy Wednesday!

Can't wait til weekend already, altho our weekend is only on Sundays for some months now, ever since my youngest goes to a play date every Saturdays πŸ˜… Regardless two days or 1 day weekends, never enough for this tired momma 😩🀣😩🀣

Since yesterday, my sleep has been short. Right on the dot at 4 AM, I would be wide awake. I thought yesterday due to the changing temperature from extreme coldness to above -5 C. Perhaps due to that, the house felt warm. However earlier, again I was wide awake at 4 AM and the house felt just normal. Last night tho, it was super windy. Idk. Maybe am just getting older. I learned as you age, you sleep less, not due to wanting to stay up like when you were younger, but the body and mind just don't sleep much, apparently? Altho that's not healthy 😬 I read if you don't get 8 H sleep, you will for sure end up with dementia and/or alzheimer 😩

So depressing. Let's just recipe sharing! 😁😁😁😁

500 g lean ground beef
2 mini bell peppers (or sweet peppers)
2 Garlic, dice or slicd
1/2 med Onion, dice or slice
1 tsp ground cumin
2 potatoes, dice or slice
2 carrots, dice or slice
2 celery , dice or slice
1 can Fava beans or any other beans (398 ml)
1 can tomato paste (341 ml)
3 cans water, depending whether you'd like to make the dish more to chili or soup, using the tomato paste' can
1 can Peaches and Cream corn kernels
2 tbsp sugar free BBQ sauce
1 tsp basil
2 tsp ground cumin
1/2 tsp Oregano
1/2 Cayenne powder
Chicken bouillon powder

Brown beef, stir in sliced/diced garlic onion, pepper, cook til soften, a minute or two, then add in ground cumin, stir

Stir in diced or sliced carrots, potatoes, celerity, cook for 3-5 mins

Add in beans, cornstarch, paste and water, stir to combine

Season

Continue cooking for 20 mins, covered low-medium heat, until potatoes, carrots, tender

Enjoy as is or with a piece of toast (sourdough if not French bread is best 😍)
