Sambal Bajak (Indonesian Hot Sauce)

Surgery Day! 😬😁😬😁

Thought I'd post one recipe to calm my nerve down a little πŸ˜… Gotta check myself in at the surgical reception, 8 AM today. My bag is packed, I've washed myself, dried my hair, just trying to breath calmly here, but my gosh, my feet are freaking ice cold! πŸ˜…

Today's recipe is what I prepared for my husband to cheer him for missing my cooking while I'm bed rest for a month long, at least 😁

Sambal!

Indonesian hot sauce 😊

One of the reasons he married me, is because of how much he loves Indonesian hot sauces, and I make a killer sambal each time 😁

2 c packed of thawed red bird eye chilies (yes I bought frozen chilies, cheaper than fresh ones and I can just grab them from the freezer whenever I need to make hot sauce - convenient 😊)
4 garlic
3 large shallots
1-2 tbsp shrim paste (terasi/belachan)
1 tbsp vinegar
3-4 tbsp packed demerara style brown sugar
Salt, sugar to taste
2 kafir lime leaves
1/2 - 3/4 c water
4-5 tbsp peanut oil

Into a wok/pan, place 2-3 tbsp peanut oil, then add in chilies, shrimp paste, shallots and garlic. Cook for 8 minutes on low-medium heat, covered. Stir occasionally.
Dump mixture into an electric blender or food processor, add in 2-3 tbsp peanut oil. Process until smooth. Dump mixture back into the pan.

Pour in water, start cooking on low-medium heat, add in kafir lime leaves.

Season with vinegar, salt, sugar, brown sugar, and cook for at least 8 mins (until changed in color and thickened).
