Here is a traditional Shepard’s pie recipe, but of course is the vegan version. I have made this many times and tastes absolutely delicious. So, if you are vegan and like Shepard’s pie then differently try this recipe.
- 2 pounds (900g) of potatoes
- 1 little onion
- 5 oz. (125g) TVP soya mince (dried or frozen).
- 1 leek.
- 2 medium carrots.
- 1 pint of veggie stock.
- 1 oz. (25g) wholemeal flour.
- 1 tsp. peanut butter.
- Pre-heat the oven to GM 4/ 350 ° F/ 180 ° C. If making it with dried TVP mince, soak it in the veggie stock up until you're prepared to start using it. Boil the potatoes.
- Slice and fry the onion. Include sliced leek and carrots. Include the stock and TVP mince, 1 tsp. blended herbs, salt and pepper. Boil and simmer for a couple of minutes. Include the flour and peanut butter and cook for a couple of more minutes.
- Mash the potatoes. Place the mix in an oven dish and spread around the top with the potato. Smooth around the top with a fork.
- Bake for Thirty Minutes.
Serves 2-3.
