How to make Gluten Free Chick Pea Cheese Puffs from Left over Hummus!

I am a leftover Queen! So these cheese puffs from left over hummus made my day!

Money is tight for everyone and one of the biggest wastages of money is throwing away good food ie Left overs.

Whether it be home made or store bought hummus, here is another great way to transform this left over and regain some fridge space and save it from the trash!

You will need:
-2 cups left over hummus
-half stick of butter
-1 cup of water
-1 cup of gluten free flour
-1/2 cup of grated cheese
-2 to 3 eggs

First heat the cup of water in a saucepan until simmering. Add butter and stir until butter has melted.

Then with a whisk stir in the cup of flour until it starts to thicken and form a rue.
Add hummus and whisk.
Keep whisking during this process so that the mixture does not burn. This should take 2 to 3 minutes.
Once it forms a thick ball remove saucepan from heat at let it cool for a few minutes.

While warm add your eggs and whisk. If the mixture is too hot it can scramble the eggs so be mindful of this. Add one egg at a time until a smooth paste is formed.

At this point you can add your cheese of choice, salt to taste, additional herbs if you like.

I didn't need to add salt or herbs as the hummus was already flavoured to taste.

With a spoon coated with a little coconut oil so that the mixture doesnt stick to your spoon, Drop the mixture in small balls onto a parchment lined baking pan.

Bake at 425 degrees for 20 to 30 minutes until the tops slighting brown and a bit firm to touch.

Remove from oven and allow them to cool for a minute or so but these are best eaten while warm!

And voila! Warm gooey in the moddle chick pea puffs!
Left over yesterday a whole new meal today!
