Khao Kan Chin is a delicious steamed pudding with rice and the pudding is made from pig's blood. There are other ingredients in it such as ground pork, garlic, onions, and cucumbers. The pudding is mixed with the rice and baked in a banana leaf and is a classic Northern Thai food dish of the great Lan Na Kingdom. It's an old recipe that's close to being lost in our modern day of processed foods so I'm super grateful I got to eat it at one of Chiang Mai, Thailand's most famous Khao Soi eateries. The restaurant Khao Soi Lam Duan has a menu that will satisfy any Northern Thai food lover.

We just visited the Chiang Mai Museum so we were all quite hungry. When the food came, no one said a word and began eating like wild animals.

The hinlay curry was one of the first to go as the spices truly tasted heavenly.

When in Chiang Mai, most notably the restaurants, I'll order the local platter of local foods they like to call the Chiang Mai hors-d'oeuvres. It consists of the Thai herbal sausage, pork rinds, some pork nam, Nothern pork sausage and the chili dip they called "Nam Prik Noom."

The Khao Kan Chin was steamed to have a heavy umami flavor and the restaurant seasoned it to perfection. This was according to everyone else at my table because it was my first time eating it. The overall meal and khao soi was simply amazing and the staff was super warm and friendly. I'll make sure to visit everytime I'm in Chiang Mai.
