Looks delicious. I'm a fan of mint chocolate chip pretty much anything. I made an awesome mint chocolate chip vegan "ice cream" a couple of times last year that was super easy and so good. It had a cashew base, with coconut milk, so it was even more rich and creamy than regular ice cream. Real mint leaves made it green. One of my favorite flavor combos. :)
