Hope you are having a wonderful day today! Because today, I would like to share this great recipe of the most delicious Russian eggplant caviar. My family and friends love it very much.
We will need:
Eggplant — 2 kg
Tomatoes – 1 kg
Onions — 1 kg
Carrots — 1 kg
Sweet peppers — 1 kg
Hot peppers — 2 pods
Sugar — 1 tbsp.
Salt — 3 tbsp.
Vegetable oil — 350 ml.
Vinegar 9% — 3 tsp.
Here we begin :) So first we wash and cut eggplants into cubes of medium size.
Add 5 tbsp. of salt and fill with water so that the eggplant would be completely submerged in water. Meanwhile, we will start preparing the other vegetables.
Clean the onions wash and cut into small cubes.
Clean sweet and hot peppers wash and cut into small cubes.
Peel carrots, wash and grate on a coarse grater.
Clean tomatoes wash and cut into cubes.
After 40 minutes, we start to fry eggplants.
After roasting the eggplant transfer in a deep, large pot.
In the pan where you previously cooked the eggplant, add the vegetable oil and fry the onion.
Then we add the onions in a pan to the eggplant.
Fry carrots until they become brown and add them into the pan.
Fry the peppers and put in pan.
Tomatoes spread on a pan, cover with a lid and give them a little bit out. After transfer tomatoes to the remaining vegetables in the pan.
Mix well all the vegetables; add salt, sugar and hot peppers. Put the saucepan on the fire and cook them for 40 minutes on a slow fire, stirring from time to time. (For those who wants to keep for the winter: you add vinegar ten minutes before its ready).
